It’s easy to disregard carrots because they’re everywhere. Orange, tube shaped things with a head of green. Here’s why you should give these carrots a chance.
What’s so great about them? When you bite into a carrot freshly picked from the farm, you can really taste a difference. They’re full of flavor. Also, different colored carrots have various health benefits:
Purple: chock full of beta carotene (precursor to Vit A) which is good for your eyes and having a healthy body. Woo!
White: Phytochemicals! They work with nutrients that help prevent diseases!
Yellow: Contains all kinds of compounds and such that help develop healthy eyes and fight disease. They are enormously good for you.
Are they easy to grow? Plant these carrots in deep, peaty soil. says the Oregon State University Extension Service.
What I do with them: Toss some julienned carrots in olive oil, fresh rosemary, salt and pepper and roast these babies in the oven at 400 F for 10-15 minutes for some healthy fries.
Okay, where can I find them? Farmers’ markets and CSAs. Look for white, yellow, purple, and orange carrots!
