I’m getting some hints from the family that they want me to make Thanksgiving dinner this year (oh, and last year. NBD). Tonight I made my baked risotto and roasted some veggies. There’s Brussels sprouts, carrots, onions, and some carnival squash.
I just lightly coated the veggies (minus the squash) with some olive oil, sprinkled salt, pepper, and dried rosemary on top and cooked until tender.
