Everyday is meatless for me but it’s still fun to join in! Today for lunch I had a sandwich with stone ground mustard, spinach, lettuce, green peppers, and red onions on a crusty, Otis stout bread. I paired this with a chickpea, onion, and celery salad, tossed in olive oil, basil, and salt. Took all of ten minutes to prepare!
Dinner will most likely be butternut squash soup (with more of that delicious bread!) What are you eating today?
