Potato Leek Soup

Well, more like mashed potato leek soup. Every week, Carolyn, Kate, and I get together make soup and drink cider with a kick. The weather has been quintessential for soup making, great company, and warm drink. We enjoyed our soup with Pillsbury Buttermilk Grand biscuits.

  • 2 lbs Yukon gold potatoes (any potato is fine but Yukon is rich and creamy), diced
  • 2 leeks, chopped
  • 2 tbsp olive oil
  • 1 quart vegetable broth + 1 cup water
  • 1 tbsp fresh thyme, chopped (save some for garnish)
  • 2 tsp black pepper
  • 1/2 tsp cayenne
  • Salt to taste
  • 1 cup heavy cream (substitute or omit for vegan)
  1. Boil potatoes in a large pot until mostly tender. Drain, leave in colander.
  2. Saute leeks in oil. When transparent, add potatoes, broth, and spices. Bring to a boil until potatoes are very tender.
  3. In a food processor or blender, puree potatoes, leeks, and broth to the desired consistency.
  4. Return to pot, add heavy cream and stir. Ours turned out very thick, much like mashed potatoes. It was awesome. To make it thinner, add more broth!
  5. Garnish with fresh thyme and enjoy!
