November 24th, 2011- Doomsday

In a little more than a month, we will be celebrating Thanksgiving. It’s a holiday that can be a nightmare for many people, especially vegans and vegetarians. Personally, Thanksgiving in the past few years has been sometimes hit and mostly miss.

In the first year of my vegetarianism I had to take control of preparing the stuffing. My family loves to add sausage and turkey drippings and then deny they ever heard of sausage and turkey drippings. The second year I was surprised with a Stouffer’s Manicotti plate. While I appreciated the gesture, I knew I couldn’t let that happen again. The third year was spent with my boyfriend’s family. While the butternut squash stuffing and the vegetables were great, there was almost no main dish. I don’t know about you but I’m completely freaked out by Tofurky (and many other processed fake meat) so that is out of the question.

For the next month, I will be testing and posting various meat and dairy-free dishes that will wow your family. The goal of this is to share easy, delicious recipes. Some recipes you can expect are:

  • Easy Butternut Squash Risotto
  • Soysage Stuffing
  • Mashed rootables
  • Seitan Medallions with Mushroom Gravy
  • Vegan Pumpkin Cheesecake bars

As much as I wish I could say I've been a healthy vegetarian for the past 8 years, I can't. I started off as many veg's do: eating primarily processed soy products, pasta, and pizza. I also brought meat back into my diet when I started a job in catering. When I realized that cutting out meat didn't make me feel any better and I was still gaining weight, I decided I needed to make some major changes. I started experimenting and researching; I found that the fresher the food was, the more I enjoyed it. I believe we are what we eat. How we feel and what we eat is so profoundly interconnected. It's impossible to exclude factors like diet and lifestyle when you are trying feel better overall. I understand how difficult eating (or just finding) healthy food can be which brings me to this blog.
